Sucrose

Sucrose is a disaccharide composed of two monosaccharides: glucose and fructose. These two sugar units are linked together by a glycosidic bond, specifically an α-(1→2) glycosidic linkage, where the anomeric carbon of glucose (C1) bonds to the anomeric carbon of fructose (C2). This connection leads to sucrose being a non-reducing sugar, as both anomeric carbons are involved in the bond, preventing it from acting as a reducing agent.

Chemically, sucrose has the molecular formula C12H22O11 and a molecular weight of approximately 342.3 g/mol. Structurally, glucose exists in its α-D-glucopyranose form, while fructose adopts the β-D-fructofuranose form in sucrose. This disaccharide is naturally synthesized by plants and is abundant in products like sugar cane and sugar beet, making it the primary constituent of table sugar.

Biological Function

Functionally, sucrose serves as an important energy source in many organisms. It is highly soluble in water and is metabolized by enzymes such as sucrase to yield glucose and fructose, which are then utilized in cellular respiration pathways to produce ATP.
