Biological Activity
Glucose isomerase can catalyze the reversible isomerization of D-glucose and D-xylose into D-fructose and D-xylulose, respectively.
One unit of enzyme activity is defined as the amount of enzyme required to convert glucose to fructose at an initial rate of 1 μM/min under standard assay conditions.
