Milk is one of the first food components introduced into the diet and therefore represents one of the most important food allergen sources in terms of frequency and severity of allergic manifestations. Cow’s milk contains 25 different proteins, but only the whey proteins α-lactalbumin, β-lactoglobulin, BSA, and lactoferrin, as well as the four caseins, have been identified as allergens. beta-Lactoglobulin (BLG) is a member of the lipocalin protein family and a major food-borne allergen in humans. It binds retinol and is probably involved in the transport of that molecule. Numerous in vitro studies have suggested a role for BLG in molecular transport processes; however, its physiological role remains enigmatic.
